Heat 1 tablespoon oil in a 12 inch nonstick skillet over medium heat. Spoon about 1 6 shrimp filling and 1 2 cup mexican cheese blend on one side of tortilla.

Add corn and peppers. Cook for 1 minute or until tender. Add the chopped onion bell pepper and garlic to the pan.

Heat large skillet sprayed with cooking spray on medium heat. Toss the cheese with the cilantro and scallion greens. Melt 1 2 tablespoon of the butter in a medium frying pan over medium high heat.
Stir in shrimp mixture. Saute onion in the hot oil until tender and translucent about 5 minutes. Slice each quesadilla into 8 wedges sprinkle.
Fold tortilla in half. Cover with another tortilla coated with refried black beans and cook until cheese melts about 4 minutes. Repeat with the remaining quesadillas adding 1 2 tablespoon of butter to the pan for each quesadilla.
Add one of the assembled quesadillas and cook until the cheese is melted and the tortillas are crispy and just turning golden about 3 minutes per side.
