Cover with water or chicken stock and cook on medium for 6 hours. Season with chili powder salt and pepper.
Simmer on med low heat for 4 to 5 hours adding more water as needed.

Place the beans and water in a large stockpot. Cover the pot and cook for 6 to 8 hours on high or until the beans are tender. Place the beans and ham hocks in the crock pot with the bay leaves and crushed red pepper flakes.
Remove hamhocks when they are tender and falling apart.
